...with various fermenting demijohns

As a non-wine drinker (at the moment anyhoo) I currently have 13 :ohmy: gallons in various stages of fermentation, as well as 3 gallons of turbo cider.

I've now been to supermarkets in three countries and can only find white grape juice in one, so I'm mainly cooking rosé types of juice wines, but I'm also experimenting with "wine" made from cordial/syrup and also from fruit "tea" bags

Now you have to understand, this is to take home at Chris... er in December for friends and family.

For myself, I've ordered a cider making kit (that goes into a 30L bucket... so I've also ordered myself some 500ml bottles!)

Now all I need to do is to clean my house and I'll be all set to recieve visitors!

Currently fermenting:
RGJ + pomegranate
RGJ + Apple/Cranberry
WGJ + Apple
RGJ + Raspberry
Grenadine syrup
Strawberry syrup
Blackcurrant syrup
RGJ + red multifruit juice
RGJ + Blackcurrant/pomegranate fruit tea
WJG + Apple/Kiwi
WGJ + Peach/cherry

Racked:
WGJ + Orange (original WOW) (veggie friendly with bentonite)
RJG + Pineapple/passionfruit

We can only get WGJ from Twongos in Hastings here, so we get 10 litres, add 2 litres of cheapo cider, some usual chemicals and yeast, 4kg sugar, (boiled first) and make up to 6 gals.

Ferments in about 15 days, and ready to drink when clear (about a week).

Works a treat...;0)

The WOW is incredibly dry (0.988 SG) and will require a little back sweetening when it's bottled (a job for this weekend ;D)

I have four gallons which are ready to rack, and had a whale of a time last night doing QC checks  :tongue2:

My TC is also ready to rack, so all I'm waiting for is my new airlocks to turn up, and then I'm ready to go.

must be 30yrs last made wine.looking at yours think give go again.how things change, are they plastic water bottles with hole put in your self in lid. would love to do blackcurrant wine got loads on plot. have you got easy recipe. what does rgj ,wgj mean is it red/white grape juice sorry for sounding stupid. bet family and friends will love you Christmas, i would if i was given one as pressy.

I'm not confident enough yet to make wine from "real" fruit, but I'm sure if you search in this portion of the forum you will find several recipes for blackcurrant wine :)

And yes, WGJ/RGJ means white and red grape juice :)

Casey, you can take a short length of plastic tube, poke it into the bored cork, then feed it down onto a small bottle of water hung on a string next to the demijohn to use as a makeshift air lock.

We did that for years, and became quite attached to the new gurgle sound...

At the moment I've got 8  gallons on the go. orange, apple, apple/wgj, and blackcurrant,apple and rgj.

Then yesterday I bottled a gallon of apple juice wine, and I've still got 2 bottles in the garage that I did last month.

I am trying to be good and only drinking 1 bottle a weekend.  I know they are not 'mature' yet, but still taste fine!   :lol: :lol:

But remember, it's not full strength, so we call it 'quaffing wine', because it is not as powerful as the bought stuff, and morelike  the strength of strong beer.

And, we can sit for ages talking together, and not really notice the gallons evaporating by the wine glass...

I've got a (ahem) "significant" birthday coming up in February, and everyone is trying to talk me into throwing a party.  I thought I'd give the WOW a go, and if it works I might try making batches with lots of different juices and have a little wine-tasting game at the party of "Name That Wine", with the guests having to guess which juice(s) is in each one.

Which other juices and combinations work well?  Would ideally need 10 different flavours.

I'm not sure what you consider "full strength" Growster, but most WOW-types end up between 12 and 16% depending on how much sugar you put in!

Strong beer would be 6-8% (eg. doppelbock), WOW should be into double figures.

There are beers that are up to strong wine ABV, but these are exceptional.


For a party a selection of WOW and TC brews would be easy to produce.

I'm not sure what you consider "full strength" Growster, but most WOW-types end up between 12 and 16% depending on how much sugar you put in!

OG is 1.080 Casey, and end-of is about .988, - all within about 16 days.

That's about 10 % ABV max, but you can chuck it around a bit more at that strength...

No ceremony here, we rack it into 4 pint plastic milk bottles, and let them do the final settlement. I rack each one when we want some, and use the proper glass decanters for the table, unless we're desperate, or sitting outside!

To answer your sugar question, we use 5KG for 6.5 gals.

I'm trying to lose weight Growster, that's why I'm trying to be good, and all my OH can handle at the moment is the occasional can of Mackeson!  He's spent years just drinking sparkling water and lime when we go anywhere.

Mind you, 2 gallons can disappear in a weekend if my daughter and granddaughter visit!!!   :lol: :lol:
