Title: Bread , oil
Post by: chrissie B on June 11, 2020, 11:49
I've been doing bread now for5 or so years havent bought any ,I've had varying degrees of failure and tryump  and failure but the bread I did last week was spot on and I think because of my mistake now  I put oil in my bread instead of butter so I'm wondering for those that use oil how much do you use in a 900g tin loaf .I know what it says in my recipe buy my bread stayed sort for ages .

I'm not saying how much I used so I can compare .

I started off going to do double the amount which gets me 2 large loads which I make into 4 smaller ones by putting 2 balls of dough into 1 tin , somewhere  along the line I decided to do separate but put the double the amount of oil which was 120ml
Which seems alot but the bread was the best so far.

I've always used oil, I can't be precise though. Olive oil, couple of glugs

For a large loaf tin (500g flour) I often use between 1tbsp and 2tbsp. I find it helps the bread stay soft for one extra day over a loaf with no oil. You can use melted butter instead of oil as well for a lovely taste.

Oil in the mixture will cause smaller bubbles but a slower rising time compared to a loaf with no oil.

I always use oil.
I use Olivio mostly. Sometimes vegetable (rapeseed) oil and sesame oil depending on the loaf.
I do 2 tablespoons for a 1.5lb loaf recipe
