Can anyone give me an idea as to the setting temperature for marmalade if I use a thermometer rather that the cold saucer method.

This section of the site should help you. http://www.allotment-garden.org/allotment_foods/jams-preserve/index.php. The setting point for marmalade is the same as for jam using a Sugar Thermometer ie 105 degrees C (220 degrees F).

My thermometer has helpful markings on it that tell you the setting points - it says "jam" next to 103.5 degrees and it also has markings for sweets, hard set, soft set etc.
I got it from Lakeland and it only cost a couple of quid.
Many a tear has been saved because of it. (my first attempt at jam before I got it was extremely rock hard - couldn't even get a knife to cut through it....) :lol:
