Hi all,

I wonder if anyone has any low fat delicious recipies on the above subjects that they wouldn't mind sharing. Cutting down on fats, but would still like a little treat now and then with something tasty.

I have to do the low/no fat thingy too.

This is a very adaptable recipe that i make all the time,

300ml hot fruit juice of your choice, .....i like apple juice
500g dried fruit of your choice.........I like chopped ready to eat apricot, prune and sultana
250g self raising flour
125g sugar of your choice.......i like half white/light brown
1 egg, mixed


Soak fruit overnight in the hot fruit juice.  Next day mix in rest of ingredients.  Put in loaf tin and bake 1hr30mins or until firm  on about 130. Its very forgiving if you cook it hotter for a shorter time.
Add any flavourings or spices that you fancy to go with the juice and dried fruit mix of your choice
For anyone who is not concerned about fat, spread it with butter :happy:

edited to add, the last couple of times i've made it i've cut the sugar down to 100g and its been fine.

I am always making low fat muffins, both savoury and sweet. My ideas come from Google and magazines, cook books etc. The usual suspects

Sometimes it is just nice to know some tried and tested recipies from all the good cooks out there.

Thanks for your help everyone and look forward to any more of your tasty recipies!!! A good flapjack one might be nice as oats are good for you as long as not too much fat.

This is it. Made this one with pineapple juice,it tastes lovely and fruity.  If I'd thought about it a bit more i could have got some candid pineapple to put in it
