Freezing grated courgette

It is getting desperate and I am thinking  of freezing courgette.  I seem to remember that it was suggested that grated courgette freezes and is good to add as a bulker to stews and mince and curry and such like.  Am I remembering right - or dreaming?

I freeze courgettes grated, sliced, diced, cooked and pureed and courgette soup.  The only thing with grated courgettes, is that unless you take the water out, they stick in one big lump.

I've just cooked a load tonight, and I'll puree it tomorrow and freeze in small batches.

i've just grated them, drained them a bit, then frozen them in bags, some as single portions and some bigger for casseroles and soups.

Certainly.
1 large onion, coarsely grated
3 tabs sunflower oil
500g grated or finely chopped courgettes
3 eggs
3 tabs plain flour
black pepper
1 tab chopped dill
1tab chopped mint
200g mashed feta
oil for frying

soften the onions in the oil until lightly coloured, then add the courgettes and sauté until soft.
Beat eggs and flour until well blended, add pepper to season and herbs and mix well.
Fold in the feta.
The feta is salty so you shouldn't need any salt.
Fry spoonful's of the mixture in a pan which is just coated with a little oil. 1 tablespoon for appetizer size fritters for a party or 2 tablespoons for meal sized portions.
The fritter should be golden brown.

I ring the changes by changing the cheese to cheddar, blue cheese,  or tiny cubes of haloumi, or slightly less of a parmesan cheese.
I also change the herbs to fresh oregano, a pinch of powdered rosemary or parsley with feta,
sage or thyme with cheddar or blue cheese.

I also add some fresh or roasted dried chill flakes with the feta cheese.

These freeze beautifully and I make them into appetisers for a BBQ party with my tomato salsa dip, sort of a fresh tomato chutney, or with tsatziki, or a mint, garlic and crème fraiche dip.

You can reheat on baking trays in the oven if feeding a lot of people, or in a dry frying pan if reheating just a few, or on the BBQ. ;)

One thing I forgot to say Yana is that after I have got the mixture ready to fry, I fry a teaspoonful of the mixture and test for seasoning. You may want a little more salt if you are using a cheddar cheese.

I really hope  you enjoy the recipe.

I am dealing with a cucumber and gherkin glut at the moment :wacko:
