Title: Beetroot

I have a glut of beetroot, last year I cooked it and froze it which turned out ok but not as good as freshly cooked. Has anyone frozen beetroot uncooked and defrosted before cooking. :ohmy:

Dear Harry - I have to say - No! I have made it into a hummus style dip (see Hugh Fearnley-Whittingstall) and eaten it as a hot vegetable, pickled it and eaten it cold unsliced in salads. I did once think of mixing it in a one litre jar with sugar and cheap vodka, but then looked at all the raspberries I had and though why bother? I have to say I like beetroot in all its forms, but because it stores reasonably well I have never thought of freezing it.

Beetroot makes a good chutney.  I store any surplus that way  :)

I have kept it quite well up until early January stored in a box of damp sand in the cellar.  I do the same with carrots, but they last a bit longer in store.  Make sure they are not touching each other.

We do this too, and it works really well. Later in the Spring any still in the boxes start to grow leaves, which we use in salad as they are very tasty.

Madhur Jaffrey has a crackin' recipe for beetroot and onions.  Shorvedar chukander. 

Great as a side dish to one of her curries!

We do too - a standard 'relish' and a spicy one. In fact I need to pull my finger out and get some made.....

Like the OP we've found that frozen beetroot isn't anywhere near as good as fresh but haven't tried freezing raw

Going to agree that Beetroot makes excellent chutney. Best way of storing I can think of if you want it later.

I do freeze a lot to be honest as our favourite winter soup and a must on Christmas day is borscht.
Other than that we pickle some, I also make jelly with some, recipe in the cooking bit.

Stuffed and roasted for some then spicy marrow chutney .

On the beetroot front I came acr our 'Will it Freeze' book today which recommends cooking and then freezing beetroots while still small and defrosting slowly in the fridge before use.

Regarding beetroot I’ve just cleaned a couple and froze them uncooked, I’ll let you know how we go on.
We love stuffed marrow but someone has given us some marrow pie it was very tasty and she’s going to let us have the recipe.😀🍷
