Saw a recipe on TV a few weeks back using mace which they said we couldnt get in the UK saw some in morrisons yesterday and grabbed it and now cant find the recipe I scribbled on a scrap of paper  :roll:

come on guys send me all your recipes I am determined to try this mace now I have it

Hello Beetroot Queen..  I often use mace when boiling a ham (on or off the bone), I put it in the water along with peppercorns, bay leaf and cloves.
Mace as you probably know is the outside covering of nutmeg (like the green soft outside of a conker), so it tastes a bit like nutmeg but not as strong.
I mostly use mace in savoury dishes and nutmeg in sweet foods.   Don't have any actual recipes as I am a bit of a chuck-it-in and taste it cook, always comes out ok but not so good when trying to pass on to others!
Will be interested to know what others come up with though

I like nutmeg meself as it's stronger.  I like tarragon in pumpkin soup but I never heard anyone else using it.  I like to play around with flavours, some work some don't

Just use the blade mace as you would the nutmeg. Try this combo

½ tsp ground mace
½ tsp ground cinnamon
¼ tsp ground cumin

or in multiples thereof if you're making a vat of it
