Wines sat on sediment
« on: June 16, 2010, 14:15 »
I've got about nine gallons of various wines in DJs that are between 2-3 years old that I had completely forgotten about; some have been racked, one or two haven't, so they are all on either a cm of sediment or less.

Will this have had a detrimental effect? I'm going to start bottling up but I'm a wee bit worried that I've blown it...

It's taste and tell time!
I did the same thing years ago with blackberry and an elderberry. The blackberry was fine, but the elderberry was rank. Once I had cleared and bottled the blackberry it was great, one of the best I ever made ;)
So all may not be lost ....................

The sediment at the bottom of the dj's is of course dead yeast cells and after a while even in alcohol they will start to decay.

Rack off into clean dj's as soon as pos.

Even if they are tainted a bit don't give up on them, cwtch them away and try them again in a few months.
