Not sure if anyone knows what brown spots inside a potato is a sign of.

Firstly welcome to the forums.

Them going off maybe?

Shop bought/home bought?

We are getting through the season a bit now and you can expect a few to show signs of old age, but good storage can reduce the incidents.
Did it really tell you to do THAT on the packet?

If your talking about small brown flecks/spots then I believe  that's generally caused by fluctuating growing conditions such as sudden wet period after a dry spell, or a deficiency in the soil.
Sometimes you get a brown hollow center on a largish spud thats hollow heart where it's grown fast after a dry period.  :)

Sounds like brown spot which is normally a mineral deficiency of calcium as richyrich7 says.

Thanks for replies.

The potatoes are grown on my dads allotment. He's had the same sort of problem with his parsnips, its just like brown spots within the flesh of the potato/parsnip. Not a major problem he has just been cutting them out, but just not sure what is causing it. He's a seasoned allotment holder (70 years +) but this has him a bit baffled.
