Slow cooker gammon recipes
« on: June 24, 2009, 22:38 »
Hi have my aunt coming for dinner on Sunday and would like to cook a gammon joint in the slow cooker to go with some of our own grown new potatoes and veg.

Does anyone have a recipe I could use in the slow cooker please?

Thanks,
Elcie

I try to take one day at a time, but sometimes several days all attack me at once...

Or an old recipe for gammon - I guess you can tweak it if you wish (the recipe also had a juniper sauce but I've left that out as it's such an acquired taste   ??? ):

2.5 lb gammon joint
1 pt dry cider
1 small onion, stuck with 4 cloves
1 bay leaf
8 black peppercorns
small bunch parsley

Preheat on High for 20 mins

If the gammon is likely to be fairly salty, soak overnight in cold water.
Otherwise, cover with cold water, bring to boil in large saucepan, then pour off the water.

Put the onion, bay leaf, peppercorns and parsley into the saucepan, add cider, bring to boil and put into slow cooker.

Cook on High for 30 mins, then on Low for 8 hours, until meat is tender.

I like the cider idea.  Will give it a try.

I do much the same but do the whole thing in the slow cooker.  Put the gammon (soaked if necessary) in the slow cooker.  Add herbs etc usually a bay leaf, 6 black peppercorns,
small bunch parsley, some celery (chopped or leaves), a carrot chopped and a small onion, stuck with 4 cloves or chopped in chunks.  But use what you have, there isnt a magic mix.  Just cover with water, dont overdo it and heat on high for 20 or 30 mins and then turn down to low for 8 hours ish ish.

Lift out gammon and rest before carving.  (OH calls it controlled falling apart) Turn off slow cooker but do not empty.  After dinner put the skin, bone, bits of gristle and other inedibles back in the slow cooker and give it another few hours.  Strain the stock, chill to take the fat off and use to make a really great (marrowfat) pea and ham soup.

How's that for frugal?

Sounds great. I'll do it with a bacon joint. Possibly involving cider.
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.

That is brilliant thank you everyone.  I think I might try the cider as have never done that before!  Something a little different.  Will let you know how it goes!
