Cooking saved runner bean seed
« on: October 22, 2014, 15:13 »
Can saved runner bean seed be cooked and eaten?
I've never heard of anyone doing it, so either one can't because they are poisonous or because they taste awful.
But most years I have too many beans left over from being saved, and wondered if I could cook and eat them? ???
These are large runner bean seeds and not the Barolotti/ French bean.
Any helpful comments appreciated.  :)

Yes, they can - some varieties were bred to be used for this purpose, but they can all be dried and eaten this way  ;)

Make sure you boil them for 10minutes to clear the toxicity found in all bean seeds, and then carry on at a simmer til cooked ;)

I've frozen some of mine fresh, just out of the pod to do away with the need to boil. I'm hoping this is a good move ::). I can't see that it is any different from cooking them in the pod except that they are a more mature bean. Do you agree? If I come across a bean pod earlier in the season that is too big & stringy because I missed it I've always popped it out of the pod & thrown it into the pan with the prepared pods. I've not actually frozen them Emma's as it were before.

They're lovely cooked up this way, I've got pounds ready to store!

I usually peel off the skins after boiling as they look a bit odd (pink and black) against other veg, and it is a bit fiddly doing this, but they're great eaten cold with some garlic mayonnaise and a little seasoning!

Hi there,
Many thanks for all the replies.
I never thought of freezing the seeds, will try it.
Wonder why this topic hasn't come up before. Or has it?
I can now look forward to not composting my surplus as others do.
Terrific.

for the first time ever the OH has been threatened not to pull our beans up till the pods are dry so I can use them.

One question though - do I need to soak them as with other pulses.

If the seeds have dried, then yes, soak them.
If they are still plump then don't  :)

I quite like the pink and black. Makes a nice change in chilli con carne  :nowink:

Now I hadn't thought about that, Sunny! Mrs Growster doesn't like them done as I mentioned, so it's only for me, and it takes about ten minutes, so not that bad! I'll try them with something else when she's not looking..;0)
