Curly Kale
« on: March 11, 2009, 00:03 »
Please has anyone any ideas on how to prepare a dish with curly kale.   I still have loads left to harvest, we are a little bored with plain steamed as a vegetable.   It is so useful at this time of year, but it is getting a little tough and would love to find a different way of eating it. :(

I stir fry it with some onions and spices and add a bit of soft cheese and milk at the end to make a little sauce.  Its yummy.  Though I did watch one of those cooking programes the other day and stir frying kale was the biggest no no ever!  ::)

 :D :D :D
We all have wings but some of us don't know why.

Fry some or all of the following spices to taste (mustard, fenugreek, chillis, coriander, cumin) until they start popping and/or colouring, then throw in chopped garlic or onion and ginger.  Sweat them on a lowish heat for a few minutes while you chop the kale up (cut out any really tough, stringy stems), then stick it in with the spices (and some turmeric if you like it) and put the lid on.  Keep shaking the pan every minute or two until the kale is steamed soft in its own juices.  Serve with rice or bread and a dollop of yoghurt for protein, or as a side dish with other curry-type food or plainly-cooked meat.  I do variations on this with pretty much any sort of greens and quite a few other vegetables, with spicing ranging from very subtle to pretty zingy (or, as my partner claims, thermonuclear).

I like it stirfried with a bit of bacon and onion and just before taking off the heat add a bit of balsamic vinegar. Also great in soups too. :)

we rarely see curly kale when its in at this house as once the 8 guinea pigs have had a treat there is none left  ::)

I buy ours but may have to have a go at growing it

It's easier to grow than most brassicas (basically it's a lot tougher and doesn't succumb to pests or diseases so easily), but if the guinea-pigs free-range, they will eat it.

Boil briefly with some garlic. Whiz it up with olive oil, eat with pasta and parmesan
Self-sufficient in rasberries and bindweed. Slug pellets can be handy.
