I have a wonderful recipe for spiced red cabbage and it freezes really well, if you look at the cost of a small pack of spiced cabbage in the supermarket it is usually around £2.00 so worth doing and freezing.  1 & 1/4 pounds red cabbage finely shredded, 1 large onion sliced, 1 apple cored & chopped, 1/4 tsp ground cinnamon, 1/4 tsp grated nutmeg, 2 tbsp brown sugar, 2 tbsp red wine vinegar, 1 oz butter cubed, 2 tbsp redcurrant Jelly.
Preheat oven to 150 degrees, gas 2, put cabbage, onion & apple into large casserole pot & mix well, Mix together the spices, sugar & vinegar and pour over the cabbage mix stir well, dot the top with butter and cover tightly with a lid bake in oven for 1 & 1/2 hours stirring a couple of times.  
Remove from the oven season to taste and stir in the redcurrant jelly just before serving.
This amounts serves 8

I agree with the Delia comments - we always have it on Christmas eve with sugar-baked ham.  I've done it with red wine vinegar but also with balsamic, and both are good.  I think it's better made the day before you need it, as it allows the spices to develop.  As for the apples, an eating variety is fine - just use a bit less sugar.

Slow cooker - fine cut red cabbage, onion, red wine, brown sugar, garlic plus any or all of sultanas, apples, cranberries/cranberry sauce, with a splash of vinegar if you want.  2.5 - 3.5 hours but it's not fussy.  Mine is different every time but always yummy!

Lovely any time of year but I always do it for Christmas as it goes well with turkey/ham/sausage - and the colour looks great and done in the slow cooker (even the day before & reheated) it's easy & doesn't tie up yet another ring on the stove.

I do recipes similar to the previous recipes here.
Another recipe I love is red cabbage with beetroot.
You mix sugar, 1 teaspoon  salt, and lots of blackpepper and layer this mix with cabbage, onions, redcabbage and beetroot in a large heavy based saucepan.

Mix wine, vinegar, and stock cube. Pour over cabbage and dot butter on the top.
Bring to the boil slowly, then turn down and simmer for 30  mins. Stir well. Mixture should be reduced and softened. Cover and simmer for   a further 25 -30 mins.

85 g sugar
1 1/4 k red cabbage thinly sliced
2 large onioins thinly sliced
2 eating apples  peeled, quartered,cored and then thickly sliced
4 raw beetroot peeled and cut into wedges
2 cinnamon sticks - snapped in half
3 star anise
300 ml red wine
1 veg stock cube
25g butter
Especially good with pork, duck, goose and ham.
