Cauliflower Soup

Haven't noticed a recipe for Cauliflower Soup being posted so here's mine - nice and easy.  Half way through a big bowl of it as I type ...

Makes maybe 12 servings.

1 very large, or 2 medium, cauliflower
2 large onions
1 large carrot
0.5 litre of chicken stock (or make up with 2 stock cubes)
optional : odd bits of other veg, garlic, ham, salami, etc


Boil the above until tender and then liquidise.

60gm butter
2 Tbsp plain flour
pinch dry mustard
Milk


Make a roux with butter and flour and mustard, adding milk gradually until you have a thin white sauce.  Add cooked vegetables plus water to give desired thickness.  A few fresh herbs can be added (dill is especially good).   Bring to simmer for a few minutes.  Do not boil hard.  Serve as-is or with some grated cheese on the side.
