Freezing Veg more info wanted!
« on: February 16, 2011, 13:28 »
Before anyone puts up the link for Freezing veg I already have it bookmarked  :D

The question isn't Freezing veg as such but are there other types of veg and also fruit that can be successfully frozen which have not been mentioned on the rather extensive thread.

Cheers Bill

I was just wondering as a whole really was just wondering what types of other fruit and veg can be stored without detriment to quality and taste.

Obviously the freezing sticky has a number of veg but just wondered what others people freeze that are not in that list.

Also I suppose people who freeze also blanch first what time do they give for their particular veg? Alternatively can you freeze some veg without blanching? If so are there any real pros and cons on freezing without blanching other than enzyme management.

One I can think of is Tomatoes that can be frozen whole then when you want to use for soups etc they can be skinned and added to the stock. ( Obviously no good for putting on a sandwich  :D )

Just being nosey I suppose to get ideas.

Oh yes forgot to say we got a new chest freezer today so that may have some alteria motive to the question too  :tongue2:

On the freezing and blanching chart I can't off-hand think of veg not on there ..bound to be but can't think
and blanching manages enzymes, because these spoil texture and taste..........that's why we do it :)
Beans can be frozen for about 6 weeks before they start to taste peculiar, so if it's only short term storage for thse, then don't bother.
Soft fruits are not blanched, and the taste remains but the texture is spoiled by the freezing process........which is what happens to tomatoes :D
