veg soup, anyone got a guide recipe

hi all,

anyone got a guide recipe  got some veg soup?

never made soup before so all guideance welcome

There so many variations but here's a good starting point:-

Put a little oil into a saucepan over a gentle heat.
Add chopped onion and some garlic if you like.
Add any other vegetables you have.  Chopped carrots, celery, leeks and perhaps a little potato are good.  Cook very gently for about 10 minutes with a lid on. 
Add some stock or water and seasoning and some herbs if you wish.
Bring to the boil and then simmer for about 20 minutes.
It's nice to liquidise part of it to thicken it.  Job done!

The permutations are endless though.  I sometimes add finely shredded cabbage for the last couple of minutes or add some lentils at the same time as the stock.

My starting point is :
250g / 8oz onion, chopped
250g / 8oz potato, washed and chopped.  Peeled optional; if the skin is fine I dont bother.
500g veg of your choice (leek, apple, parsnip, red/green tomatoes, mushroom stalks etc etc )
2pts stock
Splash of oil and soften the onions gently.  Add potato and cook till the oil is combined with the starch and not still on the pan, takes about 2 mins stirring.  Add stock, bring to boil, simmer until the pots and veggies are soft.  Allow to cool and liquidise.  Serves 4.
(all measures are approximate)

You can play with it from there.  Add some curry powder before the potato to a parsnip soup.  some cheese (cheddar or blue) at the end to an apple soup.  Don't liquidise a leek soup, but shred the leek before cooking.  a swirl of cream at the end.  Mix the veggies (parsnip and apple works well).  Add some herbs at the end (basil with tomato or chopped coriander leaves with carrot) or cooked in with the veg (savory with (soaked) butter beans).  Swap the potato for rice and call it chowder.

hi,

thanks to both of you for your help

i sliced

2 onions
1 leek


cubed

2 large potatoes
2 large carrot
1 small butternut squash


cooked down the onion, added the potato left it 5 mins added the rest of the veg and mixed together.

i then added a beef stock with half a spoon of strong curry powder, and let simmer.

when it was all soft / cooked i removed half  and blendered it and added it back in again

with a good stir it all came together

just tryed it and its lovely! 

home made soup and bread for tea lovely :D

there are loads of soup recipe books in the charity shop  :D

I made chicken and sweetcorn last night

The world's your oyster veg soup wise, and once the veg come on stream you'll never be short on inspiration  :)  Adding meat or lentils and beans gives you a meal and only one pan to wash  :)

My mum's basic rule of thumb is that there is one pint of liquid per pound of veg - whatever combination you want  :D

I normally use something from the onion / leek family, and often add a potato or similar to add bulk if needed.
I try to take one day at a time, but sometimes several days all attack me at once...

That's kind it if really, isn't it? Sometimes simplest is best ie a bit of onion with parsip, or with pumpkin or sweet potato. Usually use stock not water, and blitz so there is still  a bit of texture  :D

I've just made a red pepper, butternut squash and cream cheese soup. Delicious! Basically add the above + a chopped onion into stock (don't bother to fry onion) and simmer for 30 mins. Blitz. YUM!!

Yesterday I made beef and tomato soup with a good chilli kick in it - yummy  :D
Easy peasy - just cook off some onion add some chopped tomatoes (from a tin), add some stock and tomato puree and some left over roast beef that I had minced plus some chilli flakes. When cooked blitz 3/4 of it (make sure lid of blender is on firmly - unlike me as we had soup up the walls, all over the microwave and everywhere else  :mad:) and have with crusty rolls  :)
