Rubbing In Fruit Cake Recipe, Does anybody have one please?

Does anybody have a recipe for a white fruit cake using the rubbing in method. It comes out a little like Mr Kiplings Farmhouse cake. I used to have the recipe years ago, but it has disappeared now, and I loved it.  I have found countless others using the melting, and creaming and beating methods, but not the rubbing in, and it really made a difference to the texture. Would be so grateful if anybody could help me.

Sorry I've never heard of making a cake by rubbing in method. Hope you are lucky.

When the kids were little I always made this with dried fruit, and would sprinkle sugar on the top before baking to make it a bit crunchy :)

It's exactly the same as the one in my Mcdougals flour recipe book (circa 1968 :lol: )

Soaplady, Is this what you are looking for?

Fruit cake

225g (8oz) self raising flour
100g (4oz) butter
100g (4oz) caster sugar
100g (4oz) mixed dried fruits
5ml (1 tsp) grated lemon rind
1 egg
75ml (5tbsp) fresh milk

Prepare a 15cm (6 inch) round or a 450g (1-lb) loaf tin

Sift flour into a bowl, rub butter into flour until mixture resembles fine breadcrumbs.  Add
sugar, fruit & lemon rind.  Beat the egg lightly with the milk & add to the mixture, stir with a metal spoon until evenly combined.  Do not beat.  Put into prepared tin.  Bake at 180ºC (350ºF) Gas Mark 4 for 1¼-1½ hours or until a wooden cocktail stick, inserted into centre coms out clean.  Leave in tin for 5 minutes before turning out onto a wire cooling rack. Peel off greaseproof paper if used.

Variations:  
Ginger cake.  Sieve in 1 heaped teaspoon of ground ginger with the flour & stir in 50g (2oz) finely chopped crystaliized ginger.

Sultana & Orange cake  Use 100g (4oz) sultanas instead of mixed fruit & orange rind instead of lemon.

Date & Walnut cake Sift 5ml (1tsp) mixed spice with flour.  Add 75g (3oz) chopped dates & 25g (1oz) chopped walnuts instead of mixed fruit.  Omit lemon rind.

Cherry & Ginger cake Use 50g (2oz) each chopped glacé cherries & chopped preserved ginger instead of mixed fruit.

Coconut & Lemon cake Omit fruit &  use 50g (2oz) desiccated coconut with sugar & increase lemon rind to 10ml (2tsp)

 :D Soaplady.....when I saw your request for the recipe I knew I had a recipe for that cake in one of my old books, also found it in one of my newer books too, hence the metric weights  :wub:  I hope you enjoy it  :D
