Tasty new soup recipe

Thought I would try something different tonight:

Chop up some bacon and fry gently in large stockpot.
Add some chopped leeks and fry til soft, add plenty garlic.
Add 2 tins chopped tomatoes and 1 tin of mixed bean salad (rinsed).
Add some tomato puree and plenty veg. stock.
Toss in half a cup of arborio rice.
Simmer gently for an hour or so.

Serves 4-6 adults/teens

Mop it  up with homemade herby bread (easily made in bread machine  :wink: )

Tasty and healthy too. :D

Sounds lovely Mrs V.  You do love your beans don't you?  I have a bread machine too and it's great.  Made some really interesting stuff recently and mine says it makes jam too, but havn't tried that yet. :)
Cheese makes everything better.

Made your soup this evening with baked pots.  V tasty and filling - a real winter warmer!

Next time I'll try it with chorizo instead of bacon rashers.

Got any other good, tasty, easy, healthy recipes?

Hi there Mrs V.  Made this at college yesterday.
Potato and watercress soup.
I medium onion, chopped
Ilb potatoes, diced
2 pints veg or chicken stock
Bunch watercress roughly chopped
Double cream to taste
Seasoning
Grated nutmeg
Sweat onion in a little oil. Add stock and potatoes and cook until done.  Liquidise with the watercress.  Add cream, nutmeg and season to taste.  Simple but delicious.  

Sorry, no beans :lol:  :lol:  :lol:

Hi Garfield.  I have a Kenwood Rapid-bake and programme 11 is the jam cycle.  Have you tried the manufacturers website for recipes?
