Steralizing using the hot bath method.

Hello everyone,
I have two jars of home made tomato sauce and I wish to steralize in a hot bath.  The question is the books say the jars must be covered and the lids loose, but I have the jars with the 'over centre lock and hinge type.

Waddo I do, close the lids or steralize with water up to the rims???

You slightly loosen the lid on a screw top jar to let any bubbles of air escape, but they find their own way out if you use a clip top jar with a rubber ring seal, so close the lids.

Any chance of a bit of advice How long do you boil and how long will they last before going off and do you need to top off with oil or lemon juice etc 😀👍thanks

I add a little lemon juice, because the acidity helps them last longer.
