Anyone tried beetroot in a beef stew?

A friend of mine told me the other day about adding beetroot to a slow-cooked beef stew. Apart from the lovely colour it imparts, it gives it a good taste. Anyone tried it?
I work very hard so don't expect me to think as well.

No, but its an idea of what to do with all the beetroot.  Perhaps I could try freezing some for the winter.  Does beetroot freeze okay?  Brian decided he doesn't like pickled beetroot which is a bit of a problem when there is a lot of beetroot!     ::) ::)

Madhur Jaffrey has a great recipe for beetroot, beetroot with onions (Shorvedar Chukander).  I can recommend it.

Thanks Tony, will look that one up.  I have one of her recipe books, but its probably not in there.  It's an old book.

Tried Brian with roasted beetroot and beetroot crisps Rachel, but he wasn't keen.  He's a boring old f**t! LOL

Just had a Giggle and yes you can but it is best cooked first so it retains its colour and flavour and it should keep for 18 months in the freezer. All my life I have hated pickled beetroot with a passion until three years ago when someone made me a salad with what I thought were baby dark tomatoes - no - they were baby beetroots and I loved them! Try Brian with my OH's recipe for pickled beetroot: 3/4 pint of half-and half vinegar and water then make up to a pint with whole sugar. Add beetroot and bring to a boil, cook as normal, then bottle it. You can increase the proportion of vinegar if it isn't keeping as long as it should in the bottle. Back to topic, we are trying the stew tonight so will let you know how it goes.

No but I am trying beetroot grated in a meatloaf today. It's gone a pretty pink.

Ahhhh beetroot, no better in the land. Add it to everything, we freeze our beetroot soup as the kids love it. I add pickled on to my plate of shepherds pie, yummy.

Well - the beef stew was lovely and the beetroot gave it a slightly deeper note with a subtle hint of sweetness. We used cooked beetroot but next time we'll use raw as there wasn't the colour we expected in the gravy.

I don't know about red beetroot, but I found golden beetroot went a bit grey in the freezer.  What did work well was beetroot curry, it is a great veg side dish to a korma or meat curry.  I made a big batch and froze in small (500g) marg boxes and pull one out when I want to give something a bit of a shot of heat or prettiness!

I dont like the bbc good food version, too much faff.  Mine has a light tomato base, lots of mustard seeds ....  I'll find the recipe and put it in the right section later.
