Duck and goose fat

Does it go off?  Just wondered because I had some goose fat that had a use by date of 2013 - not bad seeing as I bought it in 2010! Have only just finished it off (roasty potatoes are a treat!) but it still seemed fine considering it has been open for nearly 3 years. I have some duck fat that I saved from a roast dinner and this seems fine too one year later on.
I do keep it in the fridge and do the smell test before using (rather than following the tedious use by dates which I am highly suspicious of... supermarkets trying to scare you to chuck away perfectly good food   >:()

Mine might not have been in the fridge that long  :blink: but I only find there is a problem if it isnt pure fat - if meat bits or jelly are in with it.  Otherwise it keeps.   If I have a lot I will freeze it, but that might be more to ration it out!

Thanks for the tip! I didn't think to freeze it! Like you I try to ration it out as it is such a treat  :)

I keep some in the fridge when not in use. The rest I freeze, or if it's really hot I can put into small mason jars and water bath to seal. Store in a cool, dark place to keep it best.

I didn't know you could freeze it either - brilliant idea and as you say madcat, it helps you not use too much in one go. After all, it doesn't take much for crispy roasties does it? :happy:
