I have to admit, it's a Lindsey Bareham recipe not mine.  I tried it last night and it was so good we had it again today.  (With pork loin steaks, sorry vegetarians).

Boil enough linguine for one or two people and return to pan..  On a low heat add some chopped pitted green olives and artichokes from a jar.  As much as you want but don't be tempted to overdo it.  Chopped parsley, lemon juice, extra virgin olive oil, salt and pepper to taste.  It's amazing and a really cheap tasty meal.

For us meat eaters I also did some pork loin steaks marinated in lemon, parsley and oregano.
