Title: gooseberry wine on the go

have just started my first wine in a demi-john(have used bucket kits before), bubbling away like a good 'un!!.. whats the quickest maturing drink anyones made? have used the seven day kits before is there anything that does it quicker? just wondering

i've had elderberry ferment out very quickly, a couple of weeks or so, but i reckon good things are worth the wait. ( try 18 month old rice wine! neckterr!)
