Last week I froze some of my 'dubious' potatos, some that I didn't think would store. Peeled and cut them into roast shapes and blanched for about 2mins, then cooled them off under cold tap and put in freezer in bags. Tonight we had chicken and roast veggies and I put the potatos in straight from the freezer, just separated them a bit, and cooked them in with the chicken. They were yummy :tongue2:
The less time you have, the more becomes available.

That sounds a really good idea - were they just slung in with the start of the chicken, then, from frozen?  How long did they have cooking?
I try to take one day at a time, but sometimes several days all attack me at once...

They went in for the last 40m only. After chicken came out they got another 10m in a really hot oven to crisp them up, whilest the gravy was being done, and the wine sampled :tongue2:
