Hey

I just had my most sucessful hatch, quail and chickens..

If the quails are coturnix (Japanese or Italian) you can usually sex them at around 3 to 4 weeks old.  If they are the really light Italian it can be difficult and you may have to wait until they are 8 to 10 weeks old for eggs or crowing. 

Sorry don't know about the chicken breeds.
