Happy shopper as we eat cheese by the truckload!

Apologies for the hi-jack. Freezes loverly? Never ever heard of anybody doing that. So please educate me, you can freeze cheese? Which sorts? how long does it keep for? etc etc. freezing cheese never crossed my mind at all really surprised you can do it. Let the learning commence.

I don't know about other cheeses but this cheddar freezes well.  Freezing makes the texture more crumbly, but the taste seems no different to me.  I wouldn't leave it more than six months in the freezer, but it never makes it that far anyway before it is eaten.

I tend to grate the frozen cheese for tatties and sauces. I buy a large brie and freeze that in portions.

Grate it then freeze it and you can can take out as much as you like.  Any cheddar I can get, gets bought in bulk and frozen.

I like to call the "I can't believe it's not butter" stuff, the "I can't believe it's not better" stuff. Not good.

In a sealed bag it should last for ages in the fridge anyway.
