Spaghetti squash
« on: October 11, 2013, 21:09 »
A fellow plot holder gave me 2 of these squashes to try.  The first was cut in half and deseeded, then baked in the oven for 30 minutes with a little water in the base of the baking tray.  I did one half at a time and the cut half stayed good in the fridge for a week.

The scooped out flesh was stored in a bowl in the fridge and was reheated in the oven, as needed, in a foil covered dish with salt, pepper and butter dotted over.  Has been lovely as a side veg to dip into every time the oven has been on to cook tea  :)

I found an old post from Swing Swang with an interesting idea.

Anyone else got a recipe they can share ?   :)

I don't have a recipe but I've cooked them the way you have. It's the first time I've grown them and I very much like the flavour of them. I did put bolognese sauce over one. It was a nice change from the normal spaghetti if a little unusual. I'll certainly grow them again.

I'm just boring because I like mine baked, shredded, then topped with basil pesto and some fresh parmesan shavings.  :D

Yup, once it's cooked and shredded, I use it exactly as if it was spaghetti  :)

Well I found one new use just by experimenting and can recommend it highly ;)

I put some cooked shredded spaghetti squash in a veggie curry the other night and it was delicious.  It was a mildly spiced sauce with coconut milk.  Other veggies were some spuds and whatever was lurking in the bottom of the fridge.  The squash soaked up the sauce and all the other veggies got tangled up in it.  Definately one to eat over rice with a spoon or with lots of naan to mop it all up  :D
