Salsify, Scorzonera, and Jerusalem Atrichokes

I've just harvested some Salsify, Scorzonera, and Jerusalem Atrichokes. I've never cooked or eaten any of them before - any suggestion on how I could / should cook them? :?

salsify , scrub n peel like carrots boil/ steam / microwave 6 mins mash with carrot,, or eat as a stand alone . also makes nice chips

dont do anything with the other 2 so cant comment
