Dehydrating potatoes

Does grated raw potato dehydrate successfully?, I tried mash and it took ages to rehydrate in a pan so I may as well cook it from raw.

According to Mary Bell, you can make potato flakes by putting chunks of dehydrated mash sheets in the blender and pulsing it till its ground up.

Why do you want to dehydrate potatoes ? Mine store well in my shed until they start to sprout in March/April.
