Courgette chutney

Courgette chutney

This is the one we started at lunch time and looks like it will still be boiling away at lunch its got a lot of drying out to do.


4lb courgettes
1lb onions
2oz salt
1 litre of vinegar
1 kg sugar white
3oz plain flour
1tbsp tumeric
1 tbsp medium curry powder
1 1/2 tbsp mustard powder

Dice courgettes and onions and add salt and leave overnight

Drain and rinse well the next morning

Mix vinegar, sugar, flour, tumeric, curry and mustard powder altogether and mix until lumos have gone.

Add to courgettes and onions and boil till dooms day.

Pot when ready in about 13 years time  ::) :D

The smell is lovely but the next batch i will be playing around with the liquid

if you salt the courgettes overnight - as some recipes tell you to, then a lot of the water is drained off before you even start  ;)

These were salted and drained heavily but they are still swimming, could they be more watery being home grown.

These were salted and drained heavily but they are still swimming, could they be more watery being home grown.
Just think, all that water you poured on them to keep them growing, you are now having to boil off!

Well......... I am gutted to say it was almost ready when the doorbell went, few problems on site couldnt get away and it burnt  :( gutted as it smelt fab at the end. ( prior to burning)

What a waste of all those courgettes, will try it again as it smelt so lovely

I can laugh about it now but believe me i didnt a little while ago, i was really cross  ;)

Oh poor you. :( That is so frustrating.

I always take the pan off the heat these days when the doorbell or phone goes. Have been caught out before. :ohmy:

Not really sure, i may just go for a mamouth boil again as the smell was amazing and i wouldnt want to fiddle too much. The colour was also great.

Picked four courgettes with another batch picking due tonight so will see if i get enough.

Just watch it at the end. I always check my jars first its usually the end of the recipe list i forget to check which is why its a change, tweak and hope.

I am hoping for some more courgettes tonight

I wish I could send you some. I've had to hide some in the bin. I don't know how many lovely neighbour thinks two people can eat! I've chutneyed them, jammed them, frozen in slices, dice and hollowed for stuffing, eaten them in all ways you can think of.......Even the chooks have had enough! :lol:

Made the second lot of this last night and by 11pm i was fed up waiting for it to boil down so i potted anyway, however this morning its fine it Has really thickened as it cooled so i am rather pleased with it.

It made 12, 8oz jars the only dilemma i have it where to hide the jars  :wacko:
