Soggy french beans

Does anyone have any tips for cooking frozen homegrown french beans? I have read on here that they are a great vegetable to freeze,but i just think they taste soggy.

I blanch very briefly before freezing, and have tried steaming and boiling from frozen.

Should i be defrosting them first?

I cook mine from frozen

3.5 mins in fast boiling water.

They retain plenty of texture and flavour for me like this

The texture will be different due to the freezing breaking down the plant cells, but doing as Sunny suggests will give you the best results. It's what I do and they taste fine.

They DO taste good, the just feel a little bit  :tongue2:

I like my veggies quite firm.

Just wanted to check there was no magic way of preserving the crunch.

The ones I froze last year after blanching have been quite good steamed or boiled, but I think steamed are slightly better. Cooked from frozen. They were blanched for a good few minutes, almost par-boiled really.

The ones I tried without blanching...hmmm, tried one lot and am not looking forward to eating those once the blanched ones have run out. But still better than buying from the shop.
