I love the sound of lids pinging, it's like music to my ears :D Managed to can about 10lbs of green beans yesterday for a grand total of 22 pint jars, and to my delight, they all sealed. Boy do I love hearing that metal pop! :D

That's a serious looking pan :). How long do you have to 'cook' them for?

Yes it is quite a whopper! I call it The Bomb Maker :tongue2: (it's a 25 quart All American pressure canner)
The beans are packed into clean jars while raw, covered with boiling water, sealed and processed for 20 mins at 10lbs of pressure.

Very impressive, until people on here talked about them I had no idea they existed for home use.

I've got a carrier bag of pears to bottle in syrup in the next few days ;)

Ha yeah it's a workhorse! Last season I mainly did boiling water bath canning but this year I wanted to be able to bottle low acid foods. I love it. I think it's my favorite kitchen "gadget". I still use the BWB method for my jams, but everything else goes in The Bomb Maker. This year I've done potatoes, green beans, tomato sauce and applesauce. I may do sweet corn too, I just haven't decided if I want to do all that shucking and cutting the kernels off the cob. That's a lot if work! :ohmy:
My grandmother (born in 1916) grew up on a farm in Iowa and her family did a lot of canning. I love hearing her stories about it :) This year I made red gooseberry jam and when I told her about it she said that her mother used to make gooseberry pie. I thought it was hilarious as I had never tasted a gooseberry before this summer and she knew all about them :tongue2:
