... well I've just discovered that you can freeze large lumps of peeled ginger whole.  And then simple grate it straight from the freezer.

You may all already know about this, but it's new to me.  And I hate waste so it's perfect!

I've been doing that for a little while - so much nicer than powdered!

Have you tried the same with chillies?  I freeze them, and just slice them with scissors into a dish when cooking.  Works well with lemongrass, galangal and curry leaves too.

The top shelf of my fridge freezer is full of odd bits of Thai spice plant material!  I can't get to an oriental shop very often, so it works pretty well for storing spices.

Ooooh, thanks for that wellies, I didn't know you could freeze it.  I don't use ginger all that much (well not until I joined this forum!!!!) but I usually end up throwing bits away!!!
