cannellini beans grow to dry or use fresh?

I am growing cannellini beans about 8 plants from 30 seeds. Should they be eaten fresh or dried first?
Time waits for no man and I can't wait for growth.

You can use them either way, shell them and cook them fresh or dry them for winter use :)
