Help! My tomato plants are taking over the polytunnel!

As a complete newbie to growing anything, I messed up by not taking off the side shoots on my toms and also not keeping my seed packets. I have two varieties, one which looks very bushy and another which looks like a cordon type. However, the plants have all now reached the top of the tunnel and there are far too many leaves. I pinched them off at the top and also any small side shoots, but i've only just done this and as a result my cordons are growing from more than one stalk. Should I leave them be or cut off the extra thick stalks, just leaving one central one? I have lots of flowers and am starting to get a few tiny green toms but not very many. The foliage is very dense and I don't think the fruit will get enough light. I'm going to remove the yellowing leaves from the bottom.

Hi you could pinch out the growing tips on any side shoot that has become to big to remove, i would not deleaf yet this might cause you more problems at the moment, ok to take of yellowing or dead leafs
