Title: Sweetcorn
Post by: MumoftTwo on August 15, 2006, 15:30
The courgette mountain is giving way to a stack of sweetcorn.  Does anybody know if I can just shove the cobs in the freezer to keep them for a later date, or whether they should be blanched first?

Thank you

sweetcorn freeze very well but you need to blanch them first.
Remove the outer leaves and cut the stalk. Plunge them into very hot boiling water for about a minute or two then remove them and place them into very cold water to stop the cooking process. Take them out of the cold water dry them off and put them in the freezer.
