Well I made some today following a recipe that came in a kilner jar I recently purchased. 

I had a little taste as I jarred it and oh gosh a little bit spicy for me.  It had 2 red chillies in it according to the recipe will these mellow as it sits in the jars? 

Never made chutney before and was hoping to enjoy this with some cheeses during the festive season  :wacko: if it stays this hot or gets stronger I wont be able to eat it so wondering if to make some more with less chillies - Help please

Don't think so, some chuntney's do mature with age but I can't imagine chillies changing I've not noticed myself.

I pop a chili or two in the pickled onion jar and the heat intensifies over time ! ! !

1 tbsp Olive Oil, 1 Red Onion Finely Chopped, 2 Large Red Chillies, Finely chopped, 3cm of Ginger finely chopped, 1 lb of Blackberries, 45g Caster Sugar and 30ml of Red Wine Vinegar. Heat the oil and then add the onion, chilli and ginger and cook for few minutes till softened. Add the blackberries and cook for 4-5 minutes. Then add the Sugar and Vinegar and bring to the boil. Simmer for 15-20 minutes until thickens. Whilst still hot put in warmed sterilised jars. This recipe made 2 smallish jars.

Will depend on the chillies used you can get mild ones  :)

Great thinking of making another batch with less chillies if it ever stops raining long enough to go pick some.  At this rate what is left about will be spoilt as the rain and wind here been terrible  :(
