Hi All

I started some elderflower wine before i went away on holiday a week ago and when i got back it hadnt fermented and there was lovely bacteria on the surface! Can i scoop this off and re-start the fermentation or am i best to throw it away?

Throw it out in my opinion.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.
