looking for a basic recipe for an ice cream that you can put lots of different favours too with yogurt in is good as well must be diet and with hints of how to keep it soft and not rock hard like my first experience , it will be by hand as i don't have an ice cream maker and looking at the size of the leccy bill wont be getting one any time soon .

Light and low calorie ice cream

Heres one from my ice cream machine book, so I don't know how it would turn out doing it by hand, but you may have success.
Strawberry abd passion fruit ice cream
1 tablespoon gelatine
1/3 cup hot water
2 cups fresh strawberries
1 1/2 cups low fat evaporated skim milk
1 1/2 cups splenda sweetner
1 teaspoon vanilla extract
2 tablespoon skimm milk powder
2 tablespoons passionfruit pulp
Dissolve gelatine in hot water to dissolve, place strawberries skim milk sweetner vanilla extract skim milk powder and gelatine mixture into a food processor process until smooth refigerate for one process until smooth, refrigerate for one hour before use in the ice cream maker. Good luck, you could try different fruit combinations.

that sounds eay enough , dose the gelatine keep it from going rock hard ?and is the measurements you have used american cup measurement ?

The gelatine is to make the ice cream set and give the right texture on the tongue. I use a standard cup measure (those from ikea) and 1 cup =250 ml. Hope thats useful to you.

A must of a recipe, tried it out over new year family ect, big big hit, simple recipe-change from nuts or  raspberries to any fruit you wish.

You can't make ice cream without some fat content or you won't get the right texture.  Try this lower fat version.
Half cup double cream
1.5 cups whole milk
1 cup skimmed milk
2 eggs
4 tbsps sugar or sugar substitute
Vanilla extract
Heat cream and milks until just below boiling and leave to cool for half an hour.  Whisk eggs vanilla and sugar and add cooled milk a little at a time, stirring.  Return mix to saucepan and cook over a medium heat until thickened.  Do not allow to boil.  Freeze and stir every half hour or so to break up the large ice crystals.
Variations
Substitute mint extract for vanilla and add choc chips
Add 2tbsps espresso powder or instant coffee granules to egg mix.
Sub 13 oz coconut milk for cream and whole milk
Add 12 oz frozen raspberries
etc etc
Cheese makes everything better.

sounds lovley carnt wait to do some .
anyone got a ice cream machine are they any good , not come across one here may have to bring one back if they are not heavy , or wait patiently for lidl to get one in .
