blackcurrant pastilles - too sticky
« on: December 17, 2014, 17:04 »
I've made blackcurrant pastilles according to this recipe http://www.telegraph.co.uk/foodanddrink/recipes/10525431/Annie-Riggs-sweet-recipes-for-Christmas-treats.html a few days ago and they've been sitting in a baking tray loosely covered with cling film in a cool place (a conservatory) while I try to work out the best way to package them for gifts. they looked great at first, tossed in caster sugar, but over a few days the sugar has gone quite soggy and they're now all sticky and will certainly all stick together in a mass if I try and package them up.
Can anyone suggest a way I can dry them out a bit before packaging, and also how to package them to minimise sticking together. I can't find any suitably sized gift boxes, all I can think of is plastic takeaway containers layered with greaseproof paper. I suppose that will have to do if all else fails. I'll just stick gold ribbons on them.

I would defiantly take of the cling film to allow them to dry out a bit.
Be like a duck. Calm on the surface but always paddling like the dickens underneath.

Make a box, I'm sure there's plenty of how to on YouTube. I'd separate with baking parchment ot I often use roasting bags as its crinkly, you wrap individually in squares of either
