I have just planted a new strawberry patch and obvs the plants are only small. I'm looking to utilise all spare soil/space so has anyone grown anything in-between their strawberries. I was thinking carrots although I did throw on some horse/chicken/mushroom compost

Give the plants a chance. They will just be starting to get their feet down and you need space between them to see the strawberries and to pick them. Too close and the fruits will never see daylight so won't ripen but will jut rot. And later on space is needed for runners to increase your stock. Well you asked for thoughts.

If you must use some of the space on an interim basis, I'd suggest something small and quick e.g. salad leaves or radishes.  Don't use anything that will have deep or wide roots, or will compete for nutrients or light too much, or cause earth disturbance on harvesting.

I agree with the others that you need to give the strawbs a chance.
