I make my own chilli powder, onion powder and garlic powder but as the rains came in for today I decided onna kitchen day and made some passata, borscht soup and prepared and put in the dehydrator the first batch of chilllies.
This got me thinking what else could I dry and then turn to powder so a litttle investigating on tinter web came up with loads that I never really thought about!.
Rosemary is one, I normally just cut sprigs to hang or use fresh but they say it adds good flavour without the hard woody bits.
Looks like I will be drying more than I thought this year.
Have you any worthy suggestions?

When I make passata/ tomato sauce I keep the strained seeds and skin, dry them, then grind them to either a powder or flakes. They're good for an extra bit of tomato flavour in tons of dishes.

I've made a few including the tomato skin powder Plot1 mentions.  You can put almost any dried herb, fruit or veg in the multi-processor to make a new ingredient. 

They can go in bread, hm pasta, white sauce bases and all sorts of other stuff.   They pack a punch, so be sparing, especially with herb ones.

I've made mushroom powder whenever I've seen punnets of mushrooms reduced and was given some made from giant puffball.  Both are excellent.

If you want pasta flavourings, you can dry stuff like spinach just by putting raw leaves in the dehydrator and drying like you would herbs.  Adding powder to a pasta dough is much easier than trying to get wet ingredients in  :)

And there is me throwing the tommy skins n seeds out, will give this a go when I do the next batch next week by the looks.

Like the idea of spinach for the pasta, never thought of drying it first.

Praying now for more rainy days  :lol:

Forgive my ignorance, but what is a dehydrator exactly.    I have always used the very bottom of the Aga drawer.     Mrs Bouquet

Basicly a hair dryer for food  :D
They are low temperature air driers that slowly dehydrate food.

Some are very expensive but very good. There is just less chance of of over cooking them.

Edit: I dehydrate my food in my man cave outside so I dont stink the house out!

First batch of tomato powder made today following on from the ideas above.
Have to say well good.
