Lots of elderflowers out on the bushes now so hope you can find some near you. We dilute ours with water, tonic water or even lemonade sometimes.

It's delicious  :D :D

It should keep for a couple of months but it never lasts that long here! Yes, dilute to taste.

Yes I'm chuffed with this recipe too - and the diagrams for stringing onions - always wanted to know how that was done and hope my first attempts to grow then give me some stock to practice on

do you dilute it with water?

For cooking I just use it neat (shop bought stuff Belvoir etc.)

Could you let me have that recipe Titch, I made elderflower cordial last year and it was very bitter so as we are surrounded by the flowers here I was going to try again.

Also, do you store it in plastic or glass bottles?

Thanks

Here's my recipe (actually my Mum's!) - makes about 3 litres of concentrated cordial - dilute 1:2 or 1:3 to drink.

2 carrier bags of elderflowers picked in sunshine (don't use the old pungent ones)
3 l water
2 lemons
50g citric acid (from chemists or asian food shops)
900g sugar

Chop lemons and place in a large pan with the elderflowers and citric acid. Boil enough water to just cover them once they have mushed down - if you have used two carrier bags of flowers this will be about 3 litres. Pour over the flowers/lemons and stir well. Leave overnight then strain through muslin. Reheat the liquid and dissolve in sugar at a rate of 300g per litre, or until it tastes right! Don't add too much sugar. Then bottle it and freeze or keep in the fridge.

must try this, it sounds so easy to do, wouldn't have thought of freezing it though, thanks.

Good luck. You won't regret it! Glass or plastic containers are fine for storage.
