Suggestions for a 'Light Meal'

I've got friends coming for an evening meal on Wednesday and they suggested a 'light' meal - I was going to cook a one-pot beef casserole with lots of veg in it - now I'm flummoxed  :wacko: It's a bit too cold for a salad!

What would you cook?

I'd assume digestive issues are at play, so something easy on the stomach, low in fat and with optional carbs on the side.

Maybe swap the beef for chicken and do a nice one pot dish based around this.  Or what about fish cooked in the oven in a parcel with veggies.  That always looks impressive, but is dead easy  :)

Salmon parcels with lemon grass (or lemon) and ginger would be my choice, with some small potatoes dressed with melted butter and chives (or parsley … our chives aren't growing right now) and some lightly steamed broccoli with sesame seeds and a drizzle of sweet chilli sauce for those who might like it.

Frittata & salad & or veg
Or soup & a pud, or cheese & biscuits or just cheese & biscuits & nibble things

Spicy bean casserole with fresh home made crusty bread/rolls ? Big bowl of serve yourself mash spuds on the side just in case someones idea of light is the same as mine  ;)

Oh, I was going to say Frittata.   You can add some tiny little bits of potato into it, and anything else you've got to hand.   Follow with fruit salad, mince pies and cheese.   Enjoy.   Mrs Bouquet

They were here yesterday, a good evening. We had Salmon fillets in lemon/butter sauce with peas/french beans/carrots mix and baby boiled potatoes.
A small serving of vanilla icecream was what they fancied for pud  :) I would have preferred the lemon meringue pie myself, but I have it all to myself now  :D

Mum, at 'The Three Chimneys' near Biddenden, they do a fantastic Cheddar Rarebit!

Perfect for a light lunch, in fact it's really a main course as far as we're concerned!

Oh yes, and 'The Eight Bells' in the village is under new ownership! Great prospects after all this time!

(Going there at midday today, so if you're passing..;0)
