Fluffy Sediment

Hi!
I have made a really good Parsley Wine (tastes good already) and racked for the first time. It has cleared well, but at the bottom there is this fluffy sediment that sits there but doesn't compact down. I move the demijohn slightly and it wafts about. Any ideas what i can do? I thought about using coffee filter paper and rack to another demijohn as i don't want to bottle it, but not sure if filter paper will work!

You could try carefully racking it a few times, it should reduce the amount of sediment each time.  Are you allowing it to clear naturally or have you already added finings ?

Not sure what finings are, but when reading about it i think is said that it interfered with the taste - Although i may have the wrong end of the stick.
This sediment looks like clouds - if you tried to touch it it would waft away!

If you some finings it will compact the sediment then you can rack it off.

I've not noticed any taste from finings, they would help with flocculation - most aren't veggie friendly though. If you're concern you could try something like bentonite ?

If you put your DJ in place the night before and let things settle back down and then be very careful with the syphon you should be able to avoid most of the sediment.
