Baby beets for lunch, i forgot how good they could be just simply boiled.

Not sure i will be sharing with anyone.

Sometimes the best way is just on its own. Let the veg shine in its own glory.

I know MOS will be reaching for her bucket right now

That's my favourite way of eating them.  I usually steal some while my mum is trying to peel them for pickling.  At least with all that beetroot you wont be having to take the ghastly iron tablets that I have been prescribed.  When is your baby due again?

19th august. I usually get iron after delivery because of my habit of heavy bleeds, evil tablets i'll take the beetroot.

Not long to go now for you then.  I was recommended prune juice and am finding that a small glass of that every morning is preventing the unpleasant side effects.

Baby beets for lunch, i forgot how good they could be just simply boiled.

I almost always just roast them simply wrapped in tin foil with a little drizzle of olive oil and some salt and pepper. :)

Weeeel, the golden beets and Chioggias are not great in the boiling stakes. However, roasting them (as I learned on this very forum) elevates them to new culinary heights.  So if you think your beet is a bit lacking or a tad earthy then roast it and bring it to its stickiest, gorgeous best.

Shouldn't it be called "Of beetroot and babies" then?  ;)
