Almond milk
« on: November 21, 2013, 15:04 »
After managing to buy almond milk here (a 40 min drive) I was told by my friend that it is supposed to be easy to make!  So today I have started soaking my almonds.
Anyone here tried making it?

Yes just wizz them up with water and through the seive. i use it for a cheese sauce in a vegetable crumble and put the residue on top. I don't keep cows milk in the house so its great for cooking.

I know it's easy to make but almonds are quite pricey so I wait for almond milk to go on sale and I really stock up.

Good to hear you're trying this – if you've investigated a bit you'll have found nearly all commercial almond milk has added carraggenan – which is apparently not good at all.

We have a Matstone masticating juicer and I bought a kilo of almonds but first attempt came out a little thin... even after passing the nuts through three times – as it was quite time consuming I seem to remember the rest of those nuts went on to make nut roasts

I've seen many clips on you tube of how the dairy industry operates and it (some) can be truly terrifying – cows are beautiful animals in my book and there's no way I would drink any cows milk that wasn't truly organic and preferably pasture fed (yet to try raw milk) – but then – I understand coconut milk is closer in make up to human mothers milk than cows milk! -    Not a milk substitute but I do like this coconut water

Oddly, I came across this article today that might simplify the process. I happen to regularly buy this brand of almond butter at Costco, so homemade almond milk might be part of my future   :D

Almond butter is too exotic for Spain!!  Sounds far easier though. The recipe I found has a date for sweetening, I have the nuts soaking, I will try making it tomorrow.

I made it, it is delicious  :D it cost 2,20€ for about a litre, I need to find cheaper whole almonds. I dried the left over pulp, well roasted it, in the halogen oven, not sure what to use it for, maybe add some to the top of my porridge.

on top of muffins , crumbles , don't know if it would be still almondy for marzipan if you can use it then it would bring down the cost of your milk ,
you will have to plant an almond tree and get them for free

Soaked nuts are far more digestible than non-soaked, so definitely use the pulp on top of porridge, etc. I love sliced almonds in mine along with almond milk (I'm somehwhat lactose intolerant).

you can add the pulp to your museli or as a veg crumble topping.
