Cheap meat cuts
« on: August 14, 2011, 18:04 »
Just had some excellent breast of lamb for dinner. Cost £2.65 from our butcher enough to feed me and my wife today and for leftovers tomorrow. Served with veg and potatoes from the plot today and fry it all up tomorrow. Happy days!!!!

Shame alot of these cuts are not used more but alot of people just buy packaged meat from the supermarket.

I am also keen on plate beef, belly pork and any sort of offal

Spread the word GET DOWN TO THE BUTCHERS!!!!

Anyone else got any favourites?

What is plate beef? I'm interested in more frugal cuts of meat too. Long cooking is great. I wouldn't say belly pork is very cheap nowadays, as its a bit fashionable now, but offal - liver - remains reasonable.  :) Long cooking cuts of beef are good....

Shin of beef - cooked long and slow makes a lovely soup or stew.

My son did a twice cooked belly of pork for us.  It was succulent and tender with the crunchiest of crackling.

A former work colleague of mine ate very little meat other than roadkill. Virtually anything would do including squirrel. I've not tried it yet but admit I've watched the You-tube vids on how to prepare pheasant and I'm tempted. I've passed a couple of deer carcases recently and felt a bit cheated that I wouldn't even know how to start butchering them

Use a fair bit of shin for OH, very versatile and can be left in the slow cooker doing it's thing. Also he likes a pot roast of brisket, but have to travel six miles to a decent butcher. They have it in our supermarket on the fresh counter, but charge around £6 for a small joint just for him. In the dark ages (1978) I used to buy two breast of lamb every week from a butcher for 35p each. Did my first husband and I nearly all week. In aforesaid supermarket they are around £3.50 to £4, vacuum packed.  :ohmy:I tend to buy joints now when they are on special offer and cut them into two or three and freeze them. He's not keen on belly pork, but quite likes a bit of shoulder bacon joint, boiled, if I can get it.

It must be quite hard to feed a family on meat if the knowledge of the cheaper cuts is not there, suppose that is why the re-formed frozen stuff is so popular.

Don't buy cheap chickens though, a chicken goes a long way in this house....even the dogs get a share.

Mmmm breast of lamb one of my favorite cheaper meat cuts, if cooked right, when i was a butchers lad we used to chuck these as a free gift to some customers! and a staple of my free gifts lol.

Heres how i cook them if anyone is intrested.

Buy a whole one and bone the ribs out complete if possible, cut the the rest into cubes put in large pan with bones, cover with water simmer for an hour or so. Leave over night.
Next day when cold take all the solidified fat away from the top. You now have a fantastic  meaty base for a stew so just add away. The fat that is left in the cubes is really tasty and i think even good for you as im sure the fat/grease you took of the top is the stuff thats not good for you.

Also i see alot of places now are trying to sell these breasts cut in strips with some mint sauce type stuff on. Which i actually misleads most meat buyers into cooking these totally wrong. i would never have done that to them.

I'm very important. I have many leather-bound books and my apartment smells of rich mahogany.

yesterday we had ox heart so tasty enough for 6 good size servings and £4.00 our butcher only kills 1 bullock a week at this time of year and his only other customer for the hearts is as dog food.
Breast of lamb we buy 10 at a time work out at £1.50 each.I still like fillet of steak and lamb chops but also enjoy the cheaper cuts, when ever we have bought meat from the supermarket we have been disappointed not only on price but quality very poor, thank god we have a good butcher homemade pork pie and steak and kidme pie and dont forget the faggots with proper caul fat.
If God didn't want us to eat animals, he wouldn't have made them out of food
