Desperate for squash and pumpkin recipes!!

Quite a few of the butternut squash and pumpkins that I have stored in my garage need using and I've made soup, cakes, stuffed them, stews, curry and gratin. I've looked through all my recipe books and online and they all seem to be around the same themes.
I'd be really interested in how everyone cooks their squash and pumpkin.

I have my own cement mixer and not afraid to use it!!

Roast instead of potatoes, in risotto and with pasta are the only other options I can think of  ;)

Pumpkin & sage ravioli are nice, and freeze well too  :D

Never used it in risotto. That's tonight's dinner sorted.

Do you make the ravioli yourself sunshine band?

I was gonna say sage and pumpkin ravioli  :tongue2:

I like pumpkin in buns and cakes. Don't forget pumpkin pie, which is absolutely ace  :tongue2: :tongue2: :tongue2:

I made Lorraine Pascal's pumpkin rosemary muffins. I halved them and put a rasher of grilled smoked bacon in them and ate them for breakfast.   :tongue2: :tongue2: :tongue2: :tongue2: 

I adore pumpkin curry, with added coconut milk. Corrrrrrrrrrrrrr  :nowink:   You can add coconut milk to your roast pumpkin soup too. Add spices according to your liking.  You can make puree of course if you're feeling cheffy

If you're making the ravioli, a) drain the squash mix through a sieve for a bit to get some of the excess water out and b) let the pasta sheet dry a little before adding the stuffing so it's less affected by a damp filling..first time I did it the ravioli welded themselves to my 'floured' work surface. :nowink:

I use some course polenta for that job Surbie.  Pasta making made a huge mess in my kitchen but it was fun  :D

Another more unusual one I have done a few times that is surprisingly good is squash and pineapple curry
