M,y niece is gluten-intolerant and, though trying cake and pastry recipes (shop-bought and home-made from scratch) , she says they have a powdery texture. Has anyone got anything they would recommend?

TRy gurglig gluten free with almonds. The nuts help to keep things moist, as does using oil instead of butter.

The only cakes I would recommend are flourless chocolate cakes and roulades.
I have not yet found a pastry recipe that is good.
I have a recipe for chocolate and Brazil nut flour less cake if she doesn't have a nut allergy.
I will post it if you want it.

I've had real success with Delia's all-in-one sponge using Asda GF Self-raising flour recently. My dad can't tell the difference from real flour, my OH loves it and my sister, too.
Ground almonds are always good!
